Ingredients
- 50g ready prepared puff pastry
- 5 cherry tomatoes
- 40g ricotta cheese
- 1/2 beaten egg
- 1/2 tbsp chopped fresh basil
- 5g grated parmesan cheese
- salt and pepper to taste

- Baking sheet (provided in the session)
- Chopping board
- Bowl, preferably plastic or metal

Method
Preheat the oven to 200C. Roll out the pastry and place on a greased baking sheet. Use a knife to score a border around the edge of the pastry – be careful not to cut through.
Slice cherry tomatoes in half. Slice basil into strips.
In the bowl, beat together both cheeses, egg and basil. Season with salt and pepper. Spoon onto the pastry and scatter the tomatoes. Cook for 20 minutes until the pastry is risen and the filling is cooked.
