Ingredients
- 60 ml water
- 20 g butter
- 30 g flour
- 1 large egg
- 30 g grated cheese
- pinch salt
- freshly ground pepper to taste
- sprinkle of grated parmesan for the top

Method
Preheat the oven to 180C
Put water, butter, salt and pepper in the pan and gently heat until the butter is melted. Then bring to the boil. Add flour mix vigorously with wooden spoon until the dough comes together in a nice big lump. Flatten it in a pan to make it cool down quicker and set aside.
Once your dough had couple of minutes to cool start add the egg and after it has mixed in a bit, beat until the mix is glossy. Then add the cheese and mix again.
Scoop tablespoons of the mix onto the baking sheet, leaving space between them. Bake for 10 mins at 180C and then lower the temp and bake for another 10 mins or until puffed and golden.
