Crepes Suzette

Ingredients

  • Egg
  • Tbsp flour
  • Enough milk to make the mix look like single cream
  • Orange
  • Knob of butter
  • Spoon of brown sugar

Equipment

  • Plastic wide mouth small water bottle – we’ll use this to easily shake the pancake mix together so opening needs to be big enough to put the egg, milk and flour into
  • Frying pan
  • Palette knife (if you have one) or fish slice (if you don’t)
  • A silicon pastry brush is helpful here but not essential – it will go in a hot pan so mustn’t be made of bristles!
  • Wooden spoon
  • Dishcloth – very important! Children need to clean…
  • Tea-towel
  • Tupperware

Method

Place the flour, egg and milk into the water bottle. Shake vigorously. Look inside and check there are no lumps. If too thick, add a bit more milk. If too thin, add a bit more flour. Shake again.

Heat a drizzle of oil until just smoking and then pour a small pool of batter out of the bottle into the middle of the pan. Tilt the pan until the mixture has spread out across the frying pan. When the top looks dry, use the palette knife (or fish slice) to turn the pancake. Cook for 60 seconds more and then slide out onto a plate. Do the same with remaining mix.

With a sharp knife, slice down the sides of the orange until all the skin and pith is removed. Gently place the orange in the palm of your hand and over a bowl, slice into each segment to remove it. When all segments are removed, squeeze the orange pith left in your hand so all the remaining juice goes into the bowl.

In the frying pan, add the butter and sugar. Slowly melt the two together until the sugar is dissolved. This can get to a burning stage quite quickly so unless you like burnt caramel, don’t spend too long doing this! Take off the heat and add the orange pieces and any juice. It’ll look a bit lumpy but if you gently stir, the butter/sugar caramel you made will dissolve into the orange. Take each pancake and lay gently into the sauce. Be careful as it could be quite hot. Spoon a little of the sauce over the pancake and then fold the pancake in half, and then half again so it looks like a quarter of a circle. Do the same with the other two pancakes working around the pancakes that are already in the pan. IF you are flambeing, you would do this now.
